Quinoa Salad with Orange and Honey

This salad will make a healthy lunch, snack or a breakfast. This recipe is quite easy to follow with its instructions.

Makes: 6 to 8

Preparation Time: 20 minutes

Ingredient List:

• Dry quinoa (pre-rinsed): 1 cup

• Water: 2 cups

• Mandarin Oranges: ½ cup

• Strawberries: ½ cup

• Blueberries: ½ cup

• Mango chunks: ½ cup

• Olive oil: 2 Tbsp.

• Lemon juice: 1 lime

• Honey: 1 tsp.

• Chopped mint: 1 Tbsp.

Instructions:

Take a saucepan and pour water and quinoa in this pan. Let them boil and reduce heat to simmer. Cover lid and cook for almost 15 minutes or until the quinoa absorbs water. Take off this saucepan from heat and leave the quinoa pan covered for almost 5 minutes. Let them cool and keep in the refrigerator to chill.

Mix quinoa with fruit in one large bowl. Mix them well to combine. Take a jar and add lime juice, honey and olive oil in this jar. Shake this jar well and pour on the mixture of salad and quinoa. Mix them well and sprinkle fresh and chopped leaves of mint.
